The Ndunderi
Since 2002, Minori has been known as the “City of Taste”. Here it is indeed possible to taste some culinary delights of the past and one of the most ancient traditional dishes: ndunderi. This dish is so special that UNESCO has recognized it as one of the oldest recipes in the world. It is said that these soft dumplings, once made with “caseata flour” (a mixture of flour and curdled milk), date back to Roman times. In the 18th century, pasta makers from Minori modified the recipe and, crossing the Monti Lattari, moved to Gragnano, where they started the modern pasta industry.
Ndunderi have been served in many variations, but are usually served with a meat sauce. This dish is particularly associated with the feast of Santa Trofimena. On her feast day, November 5 and July 27, the people of Minori prepare these delicious gnocchi as a tribute to history and faith.
